So I had a baby

Hey there! Bet you never thought you'd see or hear from me again, did ya? Sorry, it has taken me so long to blog again, but we've been a little busy around these parts taking care of babies :) We had Graham Matthew on August 12th at 11:47 p.m. 13 minutes before mine and my father-in-law's birthday! Crazy right? I was actually hoping the baby wouldn't share the same birth date because I wanted him to have his own day.


Red Rice


This rice you guys....So good. I apologize for not sharing sooner. It's an old recipe of my great-grandmothers. There are only a few ingredients to it, but the flavor is awesome, and it pretty much goes with anything! It's also a great alternative to just plain old rice or any other starch for that matter. I hope you enjoy this as much as our family does. This is a great kid-friendly side as well. Liam ate this very well. I know it's not just hard to find options as main dishes, but sides as well, so here ya go! Hope you're enjoying summer and staying cool. 



I finally have a couple of recipes for you! And boy oh boy are they good. Kid-friendly, too :) Bonus! Liam absolutely loved this meatloaf. It was moist, flavorful, and the sauce on top was heavenly. If you're not a fan of ketchup (it's the base of the sauce) then you probably won't like it, but ketchup is my bffffffffffff if there is such a thing. I think if I was stranded on a deserted island and had to choose three items to bring with me, ketchup would most likely be one of those items. I'm a sick, sad human being, I know. Anywhooooo, back to the meatloaf.

Hey ya'll! I figured I'd say "ya'll" since we were in the south for a week for a nice and much needed vacation. Man, was it awesome to getaway with family for a week. We love, love, love Emerald Isle. It was our 11th time there, and I can't think of another place I would rather vacation. It feels like a second home, and if you're looking for a place to go and unwind, relax, and be refreshed EI is your place. I thought I would share a few pictures with you from this past week.

Taking a little break

Hi Friends! I hope you're having a great week and you enjoyed the long weekend. We had a wonderful family weekend filled with cook outs, a wedding, graduation parties, and Liam's first experience on the golf course. He absolutely loved it, and I think his daddy was even more excited about it because he sees what the future holds for those two :) It was definitely a special moment for us to share together because it's such a passion of Scotty's. Pretty cool. Anyhow, we are gearing up this week for a trip to the beach, so I'll be taking a little hiatus from blogging for the next week or two.


Rhubarb Strawberry Crumble Bars


I hope you all are ready for a long weekend, full of family, friends, and being thankful for the country we live in with the freedoms we have. I saw a post on Facebook of a mother and her son at what I take is her husbands grave, and it said this is not just a weekend of parties, fun, and the beach. There are a lot of families out there reflecting and unfortunately visiting their loved ones grave site. While I get just as caught up as the next person with food and fun, I think we need to remember why we celebrate Memorial Day and remember those who have lost loved ones for our freedom.

Summer Strawberry Salad


I just found out today my favorite, local Farmer's Market is open for the season, and I couldn't be more ecstatic! Summer is right around the corner, friends. And for us Northerners, that means fresh produce for the next couple of months. I love, love, love using local farmers and vendors for produce. It makes me feel so much better about what I put in mine and my family's body. A lot of this salad's ingredients could be found at a local farmer's market. Yay, for that. There are a thousand different versions of this salad.

Watergate Salad


We are headed to the beach in two weeks. I am so ready mentally for the beach, sun, seafood, and one of our favorite breakfast spots. Unfortunately, my body is not ready for the beach. I know I'm pregnant, and I should give myself a little break, but c'mon if we are all honest with ourselves, we still struggle putting that swimsuit on regardless of whether or not we are pregs. It also doesn't help my skin is the color of fluffy white clouds. Yikes! Memorial Day is coming up this weekend, and we have a busy weekend ahead of graduation parties and a wedding.

Texas Sheetcake


Hump Day! Don't you love that commercial? It never gets old to me. I just love that camel. So funny..."Mike, Mike, Mike, Mike" Haha Anywho, I hope you're having a fabulous week. We've been in complete nesting mode, and I still have 3 months to go, but I have been on a cleaning/organizing/throwing out mission. Anyone need me to come clean and purge for them? I'm on a roll, people. I have been slacking with food this week, but I have had this recipe to share with you for a couple of weeks now, and I just remembered. It truly is one of my favorite cake recipes ever.

Meatball Subs


I'm sharing with you today a recipe from my mom's kitchen. It's her meatballs, ya'll, and they're quite delicious if I must say so myself. I'm not sure why I don't make meatballs more often. They're one of the easiest things to make, really. They're also versatile and kid-friendly. I know you're thinking, how versatile can they be? Well I've gotten a dinner for us, two lunches, and two dinners for my son out of them, so there ya have it.
